What you need

cup plain greek yogurt

tsp ground cinnamon

tsp vanilla extract

cup monk fruit extract

egg

tbsp salted butter

tsp baking powder

cup gluten free all purpose flour
Instructions
1. Pre-heat oven to 350F and line a baking sheet with parchment or a silicone baking mat. 2. In a large mixing bowl, cream together butter & monkfruit or sugar with an electric mixer. 3. Beat in egg and vanilla extract until creamy and fully incorporated. 4. Add in Greek yogurt, continuing to mix until combined. 5. In a separate small bowl, add gluten free flour, cinnamon, and baking powder and mix gently with a fork to combine. 6. Add dry ingredients to wet. Using a silicone spatula, gently fold dry ingredients into wet, mixing until no more clumps of flour remain. 7. Scoop batter onto baking sheet, using your hand or a glass to shape into circles. 8. Bake 10-12 minutes or until golden brown. 9. Allow to cool at room temperature & frost using your favorite vanilla frosting.View original recipe
