
Creamy High Protein Cottage Cheese Mac & Cheese
This High Protein Mac & Cheese is the healthier version of your favorite comfort food! Made with a creamy cottage cheese sauce, it's packed with extra protein, takes less than 20 minutes to make, and is a total weeknight win. Plus it's gluten free thanks to the chickpea noodles (but shhh no one will ever know!)
What you need

cup cottage cheese

cup mozzarella cheese

cup cheddar cheese

cup milk
tbsp arrowroot powder

tsp paprika

tsp garlic powder

salt & pepper

tbsp butter

tsp red pepper flake
Instructions
0 Boil water and cook pasta according to package directions until pasta is al dente. Drain and set aside. 1 Make the cheese sauce. In a food processor or blender, combine cottage cheese, mozzarella cheese, sharp cheddar cheese, milk, arrowroot powder (or cornstarch) & seasonings, minus the red pepper flakes. Blend until smooth and creamy. 2 Melt butter & combine pasta. In a large pan over medium heat, melt 1–2 tablespoons of butter. Add cooked pasta and pour the cheese sauce over top. 3 Stir gently over medium-low heat until warmed through and thickened slightly. 4 Garnish & serve. Top with red pepper flakes and serve hot! You can also sprinkle with fresh parsley or a drizzle of hot honey if desired.View original recipe
