Paleo Low FODMAP Veggie Packed Side Dish (Roasted Corn Optional)

A delicious veggie-packed side dish, inspired by roasted corn recipes but adapted to be paleo and low FODMAP friendly for a beach picnic. It features roasted yellow pepper, broccoli, and cubanelle pepper, with optional roasted corn and manchego cheese.

What you need

bunch fresh parsley

tbsp ghee

pinch red pepper flake

oz manchego

bunch scallion

tsp pepper

head broccoli

pinch salt

cup corn
Instructions
Preheat oven to 400F and line a baking sheet with parchment paper. Chop all veggies and add to a large mixing bowl. Drizzle melted ghee over veggies then add salt, pepper, and red pepper flakes, folding in to fully incorporate. Roast veggies for about 30 minutes. Top with parsley, scallions, and a few bits of manchego cheese. You can also toss all your veggies, ghee, and spices into a foil packet and grill them.View original recipe
