0 In a large mixing bowl, whisk together the dry ingredients (gluten free oatmeal, baking powder, baking soda, and cinnamon) until all combined. 1 Crack two eggs into the bowl and add milk to the bowl, and whisk both into the dry ingredients to combine. Do not over mix- it is okay to have some small lumps! 2 Gently fold in washed and dried blueberries (be careful not to squish the blueberries too much!) and let batter sit for 5-10 mins to thicken. 3 While the pancake patter is sitting to thicken, heat a skillet over medium heat & melt 1-2 tablespoons of butter or ghee to grease the skillet pan. 4 Using a 1/4 cup measuring cup, spoon batter onto skillet. Cook for 3-4 minutes until bubbles appear on the surface and the edges are set. Flip and cook for another 1-2 minutes until golden brown. 5 Serve warm with real maple syrup, peanut butter, extra fresh berries, or your favorite pancake toppings.View original recipe
