Paleo Double Chocolate Olive Oil Sea Salt Cookies
These gluten free double chocolate chip cookies are melt in your mouth delicious! Part cookie, part brownie they're soft yet fudgy and not too sweet. Dairy free, refined sugar free, gluten + grain free, this is one dessert you can feel good about indulging in!
What you need

cup coconut flour

cup olive oil
cup maple syrup
tsp vanilla

extra large egg

cup cocoa powder
tsp salt

tsp espresso powder

tsp baking soda

tsp baking powder

cup dark chocolate chips
salt
Instructions
0 Preheat oven to 350F and line 2 baking sheets with parchment paper. 1 Beat olive oil, maple syrup, vanilla, and eggs in a stand mixer or with a hand mixer/whisk until combined. 2 Combine almond flour, coconut flour, cocoa powder, espresso powder, salt, baking soda and baking powder in a medium bowl. 3 Add dry ingredients to wet slowly, mixing on low speed until fully incorporated. 4 With a silicone spatula, fold in chocolate chips. 5 Using a spoon, scoop out cookies and place on parchment lined baking sheet. 6 Garnish with additional chocolate chunks and sea salt. 7 Bake for 10-12 minutes.
