0 Preheat the oven. Preheat to 375°F and lightly coat your prepared baking dish with nonstick cooking spray or olive oil. 1 Cube the bread. Cube your gluten-free breads (or preferred kind of bread) and place them on the bottom of the baking dish in an even layer. 2 Whisk the egg mixture. In a large bowl, whisk together the eggs, milk, cottage cheese, shredded cheese, turkey bacon, garlic & herb seasoning, red pepper flakes, and a pinch of salt & black pepper. 3 Pour over the bread. Pour the egg mixture evenly over the cubed bread, making sure everything is coated and the mixture settles into the bottom of the baking dish. 4 Add the breakfast sausage. Sprinkle the diced breakfast sausage rounds over the top. 5 Bake. Bake for 30–40 minutes, or until the eggs are set and the top is lightly golden. Tent with aluminum foil if the top browns too quickly. 6 Cool and serve. Let the casserole rest for 5–10 minutes before slicing.
