cup shredded cheddar

cup cottage cheese

tsp onion

red bell pepper

tsp black pepper

cup fresh spinach

tsp table salt

cup turkey sausage

olive oil cooking spray

tsp garlic powder

cup milk

Instructions
0 Prep the baking dish. Preheat oven to 350°F. Lightly grease a baking dish or line with parchment paper. 1 Cook the sausage. If your sausage isn't already pre-cooked, in a skillet over medium heat, cook sausage until browned. Set aside. 2 Mix the egg mixture. In a large mixing bowl, whisk eggs, cottage cheese, whole milk, garlic powder, onion powder, salt, and black pepper until smooth. Add in shredded cheese, diced red peppers, sausage, onion & green onion if using. 3 Assemble the casserole. Pour the mixture into the casserole dish and top with chopped spinach, gently mixing in with a fork. Sprinkle on additional cheese and green onion if desired. 4 Bake. Bake for 35 to 40 minutes, or until the center is set and the top is lightly golden. 5 Cool & slice.
