What you need

tbsp vanilla extract

cup oatmeal

tbsp milk

egg

tbsp ground cinnamon

cup dairy free butter

tsp baking powder

cup coconut sugar

tsp ground nutmeg

cup powdered sugar
Instructions
0 Prep your pan. Start with a preheated oven at 350° Farenheit (180°C). Line an 8×8-inch baking dish with parchment paper or grease with butter. 1 Mix dry ingredients. In a large mixing bowl, or directly in the baking dish, stir together the oats, protein powder, coconut sugar, baking powder, cinnamon, and nutmeg. 2 Whisk wet ingredients. In a separate bowl, whisk eggs, milk, vanilla extract, and melted butter. 3 Combine. Pour the wet mixture into the dry ingredients and mix until a thick oat mixture forms. If it looks too crumbly, add a splash of milk. 4 Bake. Transfer to your prepared baking dish and bake for 30 to 35 minutes, or until the top of the baked oatmeal is lightly golden brown. 5 Make the Glaze. In a small bowl, whisk together the powdered sugar and 2 tablespoons milk of choice until smooth. If you prefer a thicker glaze, add more powdered sugar 1 tablespoon at a time. For a thinner drizzle, add an extra splash of milk. 6 Cool and glaze. Let the baked cinnamon roll oatmeal cool completely before adding your sweet glaze if desired.View original recipe
