Place the whole chicken in a large container or brine bag. Pour the brine from the two 16 oz tubs of feta cheese into the container (this should be about 4 cups) and ensure it covers the chicken completely. If needed, add a little water to fully cover the chicken. Crumble one block of feta cheese into the brine. Cover the container and let the chicken sit in the brine for at least 4 hours, though 24 hours is optimal if you have the time. Pre-heat your oven to 400°F (200°C). Remove the chicken from the brine, pat it thoroughly dry with paper towels, and place it in a roasting pan or casserole dish. Season generously with kosher salt and fresh cracked black pepper (to taste). Drizzle the chicken with olive oil (a flavored olive oil like garlic or lemongrass works well). Tuck lemon wedges (from preserved or fresh lemons) and fresh thyme sprigs inside and around the chicken.
