Can you think of a better way to start the day than with a warm, cozy slice of fresh banana bread straight from the oven? Actually, I can think of a slightly better way - a slice of warm, fresh baked protein banana bread! I served this Chunky Monkey protein banana bread recipe to my family over the weekend & not only did they absolutely devour it, but they were shocked when I told them it was grain free, gluten free, low fat, dairy free AND had juuuuust under 9g of protein per slice! What you need

chocolate

tsp table salt

oz vanilla protein powder

tsp baking soda

tsp cinnamon

tsp vanilla extract

tsp baking powder

cup almond milk

tbsp walnut pieces
egg

Instructions
Pre-heat oven to 350F & line a loaf pan with parchment. I used a 10” loaf pan which made bars, for a thicker loaf use a smaller pan. Add bananas, eggs, maple syrup, milk & vanilla to a large mixing bowl, whisking with a fork to beat the eggs, then gently mashing into the banana. For this recipe, I left the bananas rather chunky, but you can mash them completely if you prefer. In a small mixing bowl, combine all of the dry ingredients & whisk to combine. Pour the dry ingredients into the wet, folding gently until fully combined. Fold in chopped chocolate & walnuts. Bake for 20-30 minutes or until a toothpick comes out clean. Serve immediately or store in the fridge in an airtight container up to 5 days.View original recipe
