Small Batch Paleo Chocolate Matcha Donuts

In efforts to be festive, I made these INSANE Small Batch Paleo Chocolate Matcha Donuts in honor of St. Patrick’s Day! Matcha maybe isn’t exactly what you think of when you think St. Patty’s, but it’s green, so it fits, no? This ONE BOWL recipe is not to be missed! They taste like an old fashioned chocolate glazed donut + you’d NEVER know they were Paleo!

What you need

tsp vanilla extract

tsp salt

tbsp unsweetened almond milk

cup almond flour

tbsp matcha powder

tsp baking powder

tbsp almond oil

cup cocoa powder

cup monk fruit extract

tbsp coconut cream
Instructions
Preheat oven to 350F and grease a silicone donut pan. In a large mixing bowl, beat together eggs, almond oil, almond milk, vanilla, and monkfruit. Add almond flour, cocoa powder, baking powder, and salt to the wet ingredients and whisk to combine until smooth. Spoon batter into the donut pan; for a more rounded donut, add batter to a piping bag, snip off the tip about 1 inch up and pipe into the donut pan. Bake for 15 minutes or until a toothpick comes out clean. While donuts bake, whisk together icing ingredients (powdered monkfruit sugar, matcha powder, full fat coconut cream) in a medium sized bowl until smooth. Allow donuts to cool completely before dipping them into the bowl of icing. You can place them in the fridge to speed this up. Top with cacao nibs and chocolate chunks and ENJOY!View original recipe
