Warm the brown rice tortilla in the microwave for about 10 seconds. Make a slit from the center of the tortilla to the bottom of the tortilla. Spread greek yogurt evenly along the tortilla, then add fillings in 4 sections: ground turkey, cheese/tortilla chips, tomatoes and greens/cabbage/radish. Fold the tortilla one quadrant at a time into itself until it’s completely folded & hand held. Add 1 tbsp ghee to a pan and heat on medium high. Once ghee is melted & pan is hot, place the tortilla into the pan & brown for around 2 minutes on each side. NOTE: brown rice tortilla wraps are SMALL! You won’t fit this all into one wrap. You can make two wraps if you like OR you can make the remaining ingredients into a small side salad like I did!
