For the Crust: 1. In a medium mixing bowl, add flour, Graham cracker crumbs, salt, and coconut sugar, mixing to combine. 2. Cut cold butter into pieces and knead into the dry mixture with your hands. 3. Add ice cold water 1 tablespoon at a time to form the dough (4-6 tbsp total). 4. Allow dough to chill in the fridge for 20 minutes. For the Filling: 1. In a medium bowl, combine chopped strawberries, monkfruit or cane sugar, lemon zest, and lemon juice, folding to combine. Assembly and Baking: 1. Once dough is chilled, roll it out into a large circle on a floured parchment-lined surface. 2. Spoon strawberry filling into the center, leaving 1 inch of space around the edges. 3. Using the parchment as your guide, fold the edges over to form a crust. 4. Bake at 350F for 30-35 minutes or until the crust is golden and the filling is bubbling. 5. Optionally top with mint or basil and ice cream.
