Add yogurt, protein powder & PB powder to a mixing bowl. Whisk until smooth & creamy, no clumps should remain. If adding the cookies, smash them up, add to the yogurt base & fold in. Add mixture to silicone ice cream pop molds. Freeze for AT LEAST 4 hours (the longer the better!) Melt chocolate chips & coconut oil in the microwave in 10 second increments until smooth. Coat pops in chocolate & a sprinkle of optional sea salt. Freeze again on a parchment lined baking sheet or simply enjoy right away!
