In a medium mixing bowl add flour, Graham cracker crumbs, salt & coconut sugar mixing to combine. Cut butter into pieces, kneading into the dry mixture with your hands, adding water 1 tbsp at a time to form the dough. Allow dough to chill in the fridge for 20 mins. In a medium bowl, combine chopped strawberries, sugar, lemon zest & juice, folding to combine. Once dough is chilled, roll out into a large circle on a floured parchment lined surface. Spoon strawberry filling into the center leaving 1” of space around the edges. Using the parchment as your guide, fold the edges over to form a crust. Bake at 350F for 30-35 mins or until crust is golden & filling is bubbling.
