Add to popsicle molds: Pour the ice cream base mixture into silicone ice cream pop molds. Freeze for at least 4 hours before proceeding. 3. Coat the ice cream bars: First, drizzle caramel sauce onto the frozen bars. Then, press the caramel-coated side down into crushed peanuts and broken-up pretzels. 4. Melt the chocolate: Melt chocolate chips and coconut oil in the microwave in 10-second increments until smooth. 5. Finish coating: Dip and coat the bars in the melted chocolate. Optionally, sprinkle with sea salt. 6. Freeze or enjoy: Freeze again on a parchment paper-lined baking sheet for storage, or enjoy immediately. If storing, pull them out about 15 minutes before serving to soften.
