Mix the ice cream base. Add the pineapple juice, pineapple chunks, coconut milk and protein powder to a blender, blending until smooth. Pour into a ninja creami pint container, filling it just to the "max fill" line.
Freeze. Freeze the dole whip mix for a minimum of 8 hours, up to 24 hours.
Make the ice cream. Once fully frozen, place the pint container into the outer bowl. Place the outer bowl lid on top, twisting to lock the lid into place & place the outer bowl into the ninja creami, locking into place.
Mix & remix. Power on the Ninja Creami, then press the "lite ice cream" button to mix. Once complete, you will need to add an additional splash of milk or pineapple juice (about 1 tbsp for a soft serve texture, 2 tsp for a harder texture) and respin.
Scoop & serve. Scoop the dole whip into bowls & garnish with mint if desired.
